Hidden Hamburgs

These are fun hidden hamburgs – ground beef and cheese (so cheeseburgs, actually) – tucked in a homemade bun. I was inspired by the recipe for Cheeseburger Buns in “Mom’s Best Meals” in an old Taste of Home (12/3/2007) but didn’t have shortening and knew my children wouldn’t like all the ingredients, so, I adapted a hamburg roll recipe from http://allrecipes.com/Recipe/Hamburger-Buns/Detail.aspx and just made my own cheeseburger part. The hamburg buns were really nice and soft and made the house smell so good too. So here’s the recipe:

Ingredients

2 cups warm milk (110 degrees F)
1/4 cup butter
1/4 cup warm water
1/4 cup white sugar
2 (.25 ounce) packages instant yeast
2 teaspoons salt
6 cups all-purpose flour, or as needed

1 pound ground beef, cooked
Any kind of cheese you want to use
I just used the beef and cheese, but you could add whatever other seasonings you usually add to hamburgs, e.g. Worcestershire sauce or whatever. I’ll do that next time.

Directions

1. In a pot, warm the milk, butter, and water.
2. Pour into a bowl and add sugar and yeast. Let stand for about 5 minutes.
3. Mix in the salt, and gradually stir in the flour until you have a soft dough. (I had to knead
briefly.)
4. Divide into 24 pieces, and form into balls. Place on baking sheets so they are 2 to 3 inches
apart. Let rise for 20 minutes.
5. Now instead of baking them, I rolled them to a 5-inch circle.
6. Put ½ slice cheese down on the dough, then top with 2-3 spoonfuls of the cooked ground
beef.
7. Pull the edges of the dough together and pinch under to seal.
8. Place seam side down on a baking sheet (greased or with parchment paper) and let rise until
doubled (maybe 20 minutes.)
9. Bake at 400 degrees 8-12 minutes.

The Taste of Home recipe was supposed to yield 16 sandwiches. I got 12 and then had 12 buns left over. These I baked at 375 for 10-15 minutes. They taste pretty good the next day too.
