Israeli Couscous Salad


Here is a great recipe from my friend Elizabeth. It has easily become a favorite in our house. Besides the onions, the kids like the rest of it. We, my husband and I, love all of it! He says he could eat it everyday! I even left out the garlic and lemon juice by accident once and it was still great! I hope you enjoy it as much as we do!

1 1/2 cups of Israeli couscous ( has to be Israeli)
1 pint of grape tomatoes cut in 1/2 or 1/4
1/2 red onion, sliced thin ( I chop into little pieces)
1 bunch basil chopped
2 tsp minced garlic
1 can of corn pan fried
1/3 cup red wine vinegar
1/3 extra virgin olive oil
1/3 cup splenda OR 1/4 cup of honey (I use honey)
1 Tb lemon juice
s + p to taste

Bring pot of water to boil, and add couscous, cook for 5-8 mins al dente.
Drain well and chill. Meanwhile, whisk together garlic, vinegar, olive oil, honey, onion and lemon juice.
Toss couscous with dressing and add corn and tomatoes. Season to taste w/ s + p.

This makes a great side with burgers, kabobs, etc. It is great to make and eat on all week.

  1. My husband and I loved this! I would probably use even less onion next time, but other than that it was awesome and definitely something I'll make again! :)
