Baked Oatmeal


I found this recipe on All Recipes, but made lots of changes to try to make it a little bit more healthy. I reduced the butter and sugar in half and subbed some applesauce to make up the difference and added wheat germ to increase the protein content. Anyhow, my daughter didn't even notice a difference compared to the original...neither did I! I also cut the entire recipe in half as we don't eat the whole thing in one sitting and I'd rather make it fresh each day. You could easily double this recipe if you wish. This does not come out in bars, it is more like a hearty soft granola cereal.

Ingredients:
1 1/2 cups oats (rolled or quick...I used 1 cup rolled, 1/2 cup quick)
1/4 cup wheat germ
1/4 cup brown sugar
1 t cinnamon
1 t baking powder
1/2 t salt
1/2 cup milk
1 egg
2 T butter, melted
3 T applesauce
1 t vanilla extract
1/4 - 1/2 cup dried fruit (raisins, craisins...etc) OPTIONAL

Directions:
Preheat oven to 350 degrees
Mix all ingredients thoroughly.
Lightly grease 8x8 or 9" pie pan.
Pour into pan.
Bake 30 minutes until browned around edges.
We like to eat it all broken up with a little milk poured over top.
