Petra’s Tortilla’s

Here are tortilla's that Tina makes to go with Elena's burrito recipe. I think these would be a lot of fun to make...but then again, that's probably just because I like to cook.

1 cup Jiffy baking mix
1 and 1/4 cup flour
½ tsp baking powder
1 tsp Crisco
1 cup of warm water
½ tsp salt

Before beginning, place iron skillet over low heat warming it
While preparing mix.
Also, you want to have a floured surface ready to work on and
A rolling pin.
Tip: I flour the pin as I work. I also flatten the ball into a disc
Before I roll. Once I’ve rolled a couple of times, I pick the
Tortilla up and turn it, then roll again. Helps keep a circular shape.

Mix dry ingredients first, then cut in Crisco.
Slowly add water. (you want a consistency that you can knead.
If mixture is too sticky lightly sprinkle with flour ).
After kneading, let mixture sit for 5-10 minutes.
Pinch off golf size balls and again, let them sit for 5-10 minutes.
Flatten into disc and roll.

Once you have a tortilla rolled, place it in skillet (no oil needed).
Turn with spatula when small bubbles form on surface. There should be
Light brown spots on the tortilla, that is normal.
Tip: while tortilla is cooking, you can roll the next one.
