Roasted Chickpeas

My toddler & 7 year old gobble these up as soon as they are cool enough to eat. My 5 year old won't touch them, but 2 out of 3 works. Easy, healthy, and cheap!

2 cups cooked chickpeas/garbanzo beans (I cook in a crockpot -- see below*.)
3 tbsp. olive oil
Salt, pepper, lemon juice, any spice mix you want.

Preheat oven to 400.
Put oil in casserole dish.
Spread chickpeas in a single layer in casserole dish.
Roast until brown/to desired consistency. ("How to Cook Everything says to roast 15-20 minutes, but it took us 30-45 minutes. Hope it's not my oven!)
Sprinkle w/ salt, pepper, spices.

*I just soak 1 lb. dried chickpeas overnight in 6 c. water, then drain and refresh the water & cook on low 'til done -- can't remember how long, but just try occasionally to the consistency you like.
