Tara's Zucchini Bread

As seen in The Preparation for the Toddler Years by Gary and Anne Marie Ezzo, here is Tara's Yummy Zucchini Bread. It is AWESOME!

Ingredients:
1/2 cup (optional) dried fruit
1/2 tbsp baking powder
1 tsp salt
1/3 cup oil
1 tbsp baking soda
1 cup shredded carrot
1 cup shredded zucchini
1 banana (optional...Tara likes to use it if she has one sitting around :) )
1 to 1 1/2 cups sugar
2 tsp. cinnamon
2 cups vanilla yogurt
3 cups flour (I used 1 cup whole wheat, 2 cups all-purpose)
3 eggs
3 tbsp apple sauce
8 tsp wheat gluten

Directions:
Preheat oven to 375. Beat eggs until foamy then add sugar, oil, yogurt, apple sauce, cinnamon, zucchini, carrot, (and dried fruit optional). Mix well. In a separate bowl, sift together flour, salt, baking soda, baking powder, wheat gluten. Add dry ingredients slowly to the yogurt mixture and mix until moist. Pour into 2 greased and floured 9 x 5 x 13 inch loaf pans. Bake for 50-55 minutes. Loaves should be golden brown on top.

I did one loaf pan and one muffin pan- the muffins I baked for about 15-20 minutes. YUMMY! Enjoy!
