Monterey Chicken Bake

This recipe is from hellmanns.com. We have made it a lot and the key is the Newman's Own Pineapple Salsa. They say you can use any salsa, but this one adds a wonderful flavor and it is not too spicy for the kids. I like this recipe because it cooks SO fast. It is NOT a typo...the 425 degree cooking temp!

4 chicken breasts
1/3 cup mayo
¾ c Italian bread crumbs
1 cup salsa (Newman's pineapple salsa)
1 cup jack cheese shredded

Preheat oven to 425 degrees
Brush clean, dry chicken w/ mayo
Dip into bread crumbs
Arrange in 13x9 in dish
Bake 15 minutes
Then remove, top w/ salsa and cheese
Bake 5 more minutes…ENJOY!

I usually serve with corn or salad and a baked potato.
