Quick Week Night Fav's

Here are a few recipes that are so easy to just throw together on a busy night- and the ingredients are staples in my pantry/freezer- so also good for when you haven't gone grocery shopping for the week yet!

Taco Night!
1 lb ground beef
salsa
1 can of black beans
Taco Shells

Brown your meat and drain off the grease.
Add in your favorite salsa (about 1/2 cup- 1 cup) and black beans (drained first).
(Sometimes I'll throw in some corn, too)
Stir and then turn temp down to simmer until heated through.

Cook your shells according to directions.

Serve meat mixture on shells with your favorite toppings!


Easy Chicken Parm!
Chicken Breasts
Italian Bread Crumbs
2 eggs
Marinara Sauce
Shredded Mozzarella Cheese
Olive Oil

Rinse your chicken and pat dry.
Have a shallow dish of your beaten eggs and another shallow dish of your Bread Crumbs (I just add more crumbs as I need them- start out with about a cup)
Start heating about 2TBS of olive oil in pan on Med Heat
Dip your chicken in the eggs, then coat in bread crumbs, then brown both sides in olive oil (1-2 minutes per side).
In a glass casserole dish, line the bottom with a little marinara sauce (about a cup)
As you take the chicken out of the pan, set them in the casserole dish.
Once all chicken is in the dish, pour rest of marinara sauce over top.
Then top each breast with some mozzarella cheese.
Bake uncovered at 375' for 20-30 minutes- until cheese is bubbly and chicken is cooked through!
Serve with pasta.

  3. I made it tonight and the kids devoured it! They called it Pizza Chicken! Another one to add to the rotation! SO EASY!
